The vegetable sticks in protein coating - simply sooo deliciously crispy! 😍



Ingredients:
🥕 The vegetables:

  • 100 g princess beans
  • 1 zucchini
  • 1 eggplant
  • 2 carrots


🥛And for breading:

  • 250 g spelt flour
  • 400 ml plant-based milk
  • 500 g cornflakes
  • 20 g yeast flakes
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp garlic powder
  • 2 tsp paprika powder


Choice of dips: herb dip, ketchup, BBQ sauce, mayo, guacamole (avocado, lime, salt, chili, pepper), etc.


Preparation:
1️⃣ Wash the zucchini and eggplant, remove the ends, cut in half crosswise and into eighths lengthwise.Wash the carrots, remove the ends and cut in half or quarters lengthwise.


2️⃣ Wash the beans and remove the ends.


3️⃣ For the breading, mix the dry ingredients in a blender. Pour the cornflakes breading into a deep plate.


4️⃣ Fill a second plate with spelt flour and a third plate with milk.


5️⃣ Preheat the oven to 200°C fan-assisted and line two baking trays with baking paper.


6️⃣ Turn the individual vegetable sticks first in the plant-based milk, then in the flour, then in the plant-based milk again and then in the cornflake coating.


7️⃣ Place the vegetable sticks on the baking tray and bake for 20 - 25 minutes at the same temperature.


8️⃣ In the meantime, prepare the toppings and sauces. If you fancy guacamole, cut an avocado in half, remove the stone and mash the flesh with a fork. Add the juice of half a lime and season with salt, pepper and chili.


Arrange everything nicely on a plate and serve!
